Nothing can beat a batch of fresh walnut cookies, filling the house with their appetizing smell that makes your mouth water. December is the time when walnuts can be harvested, but they are available all year round and used for many culinary purposes. Nuts are always a great favourite as a snack and walnuts are very versatile, being just as delicious when added to a nut roast or pizza, as being a main ingredient in cakes, puddings and cookies. This cookie recipe, easy and delicious, combines the two distinct flavours of butter and walnuts which are irresistibly combined with the taste of brown sugar. They make great kids cookies, being easy and fun to make with the important nutritional value of omega-3 fatty acids, antioxidants and other minerals in the walnuts. Eating them at the end of a meal may help to counteract any damage done to the arteries from fatty foods, according to research. Biscuits, cookies- whatever you call them in your part of the world, homemade cookies always look and taste so much better than shop-bought ones, making them well worth the effort. The smell of them baking in the oven will be sure to bring the welcoming touch to anyone arriving at your door! It's name derives from the Old English wealhhnutu, meaning a foreign nut, because it came from Gaul and Italy. The Latin name, Juglans, derives from Jupiter glans, "Jupiter's acorn": figuratively, a nut fit for a god.

Ingredients

  • Cream together 6oz light brown sugar and 4oz softened butter
  • Add 1 beaten egg and 2oz finely chopped walnuts
  • Work in 8oz self-raising flour
  • Add a pinch salt and few drops vanilla essence

Instructions

  1. Preheat oven to Gas 4 (180g)
  2. Knead to smooth dough
  3. Roll pieces into balls and place well apart on greased baking trays, then flatten with a fork
  4. Bake for 15-20 minutes, cool on wire rack
