Grandma's Easy Potato And Salmon Salad
A delicious salad recipe for the whole family
This salad can just as easily be served on it's own or as an accompaniment to other food. Potatoes are always a filling and economical ingredient and the salmon (which as it is smoked doesn't need cooking), adds a touch of class. Cucumber is added to lighten it up and the sesame seeds give it even more of a crunch, to contrast with the softness of the other ingredients. Dried herbs can be used to replace the fresh ones if necessary. There are many recipes for potatoes, but this one is no ordinary fish salad. It is comfortingly simple and has the added bonus of the smokiness of the salmon permeating the soft centres of the potatoes and yet allowing them to retain their crispiness. To cook potato and serve it with salmon in this way will be sure to get everyone's mouths watering.
I first found this recipe when we were living in Germany, so this is where it most likely originates and I have been making it for my family ever since. With this good salad recipe, Grandma's kitchen will be filled with the warm, inviting aroma of lovingly prepared food that will be heartily appreciated by the whole family and be sure to have them asking for seconds, if they have room!

Easy Potato And Salmon Salad is ready to serve
Ingredients
- 1.6 kg potatoes
- 120 ml vegetable oil
- 1 cucumber
- 300 g smoked salmon
- 4 tablespoons sesame seeds
- 6 tablespoons white wine vinegar
- salt and black pepper
- 2 tablespoons finely chopped dill
Instructions
- Peel and cut the potatoes into 1cm cubes. Fry in hot oil until gold-brown, turning frequently. Reduce heat, cover pan and allow to cook for about 10 minutes.
- Wash and chop cucumber into 1cm pieces. Cut salmon into thin strips.
- Add sesame seeds to the potatoes and fry together for a few minutes before putting into a salad bowl. Add the vinegar and season with salt and pepper to taste.
- Add the cucumber, salmon and dill and serve warm.
